CRANBERRY PECAN AND WHITE CHEDDAR CHEESE BALL

yield: SERVES 6
prep time: 10 MINUTES (PLUS CHILL TIME)

INGREDIENTS:

  • 1/2 cup chopped pecans
  • 1 8-ounce package cream cheese, softened campaignIcon Chill
  • 8 ounces good quality sharp white cheddar cheese, shredded
  • 1/4 teaspoon salt
  • 1 teaspoon Worcestershire sauce
  • 1 1/2 cups dried cranberries
  • crackers


DIRECTIONS:

Preheat oven to 350 degrees F. Line a small baking sheet with parchment paper. Spread the pecans in an even layer. Bake for about 5 minutes and then remove from the oven.
  1. In a large mixing bowl, beat together the cream cheese and the cheddar cheese. Add in the pecans, salt, and the Worcestershire sauce. Continue mixing for another minute or two until everything is well-combined. Remove the mixture from the bowl and form into a ball with your hands. Wrap the formed ball in plastic wrap and chill for about 30 minutes.
  2. Remove the chilled cheese ball. Using small handfuls at a time, place dried cranberries all over the cheese ball, pushing in lightly to secure them into place. Try to cover as much of the cheese ball as possible (except the bottom). Serve or cover and place back into the fridge until serving. Ingredients
  • ½ cup coconut oil
  • 1½ - 2 cups sugar
  • 1 tablespoon peppermint extract
  • 1 drop green food coloring
Instructions
  1. Place coconut oil in a bowl and microwave on HIGH 15-25 seconds until softened.
  2. Start by adding 1½ cups sugar to the oil, along with the peppermint extract and green food coloring. Mix until ingredients are well combined and food coloring is evenly distributed. If mixture is too wet, add another ½ cup sugar until scrub is to desired consistency.
  3. Spoon scrub into air-tight containers (such as a mason jar) and decorate with twine or ribbon

Sticky Honey Garlic Wings


24 chicken wings, split and tips discarded            5 tablespoons honey

3/4 cup packed brown sugar                               1/4 cup reduced-sodium soy sauce

5 cloves garlic, minced                                       3 tablespoons cornstarch

1 teaspoon minced fresh ginger root                     2 1/2 cups water

2 green onions                                                    2 tablespoons of toasted sesame oil           

salt & pepper (optional)

Directions

  1. Preheat an oven to 375 degrees F (190 degrees C).
  2. Arrange the chicken wings on a baking sheet; drizzle toasted sesame oil and coat chicken then season with salt and pepper (optional) bake until crisp, 35 to 45 minutes. 
  3. Transfer the wings to a baking dish.
  4. Mix together the brown sugar, garlic, ginger, 2 1/2 cups water, honey, and soy sauce in a saucepan over medium-high heat; bring to a boil. Whisk together the cornstarch and 3/4 cup water in a small bowl; stir into the sauce mixture until thickened; pour over the chicken wings to coat.
  5. Return wings to oven and bake until the sauce is bubbling and the chicken is no longer pink at the bone and the juices run clear, 15 to 20 minutes. 
  6. Place the wings on a server platter and garish with chopped green onions
